Cookies keep you warm

I'm totally bummed that this is my spring break and the weather is crap! Last Sunday it was soooo nice outside. We took Karsen to the park and we all had short sleeved shirts on and then we went out for ice cream. However, this Sunday it's cold and rainy and even snowed for a bit! GROWL! I was hoping for decent weather so that I could leave play outside with Karsen. It really sucks to be trapped inside the house with a toddler! He's been clawing at the door today and just doesn't understand that it's too cold and yucky outside to go out.

In an attempt to make us feel better about our crappy weekend, I made chocolate chip cookies! Of course they started out rough. My un-opened bag of brown sugar was as hard as a brick and dry as the desert. I know the old trick about putting a piece of bread in the bag, but that takes overnight and I wanted cookies NOW. Shaun and Karsen went on an "emergency" run to Target to fetch new brown sugar and new baking soda.

and finally....cookies are even better when they are turned into a cookie sandwich with cream cheese icing:)

yum! looks so good! I think that if you put your brown sugar in the microwave for about 15 seconds it makes it soft. Just for future reference if you don't have someone to run out for you!
